Jalapeño Popper Chicken

This Memorial Day weekend I was just feeling like some Jalapeño Popper Chicken was the move for us! These were so tasty! Some juicy baked chicken with a garlicky cream cheese, the melty cheddar, bacon bits, and green onion – so much flavor! This was super easy to make, and it was done in under 30 minutes!

What ingredients do I need to make this?

For the chicken breast:

Chicken Breast
Olive Oil
Salt
Black Pepper
Chili Powder
Garlic Powder

For the Jalapeño Popper Chicken:

Bacon
Cream Cheese
Garlic
Jalapeño
Shredded Cheddar
Shredded Mozzarella
Green Onion
Salt
Black Pepper

How do I make it?

To get started on this recipe, fry the bacon, move to a paper towel lined plate, then crumble when cool. Preheat oven to 400 F. Then start prepping your veggies! Dice the jalapeño, mince the garlic, then trim the fat off of the chicken breasts. Take the cream cheese out of the fridge to soften and cut it into cubes.

In a large glass baking dish, drizzle oil. Lay out chicken breast halves and season one side with half of the spices for the chicken breast. Brush the oil and the spices around, then flip, and season the other side.

In a medium sized bowl, mix cream cheese, garlic, some green onion, salt, and pepper until combined. Carefully spoon and spread the cream cheese mixture onto the top of the breasts. Evenly distribute the cheeses and jalapeños over chicken. Bake several minutes.

Next, broil chicken on high for a few minutes. Be sure to watch so it doesn’t burn! Remove Jalapeño Popper Chicken from oven and garnish with bacon and remaining green onion. Enjoy!

Ingredients
  

For the chicken breast:

  • 2 large chicken breasts fat trimmed and sliced in half to make 4 thin breasts
  • 1 tbs olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp chili powder
  • ¼ tsp garlic powder

For the jalapeño popper chicken:

  • 5 slices bacon cooked and crumbled
  • 8 oz cream cheese softened and cubed
  • 3 garlic cloves minced
  • ½ cup jalapeño deseeded and diced
  • ¼ cup shredded cheddar
  • ¼ cup shredded mozzarella
  • 2 tbs green onion thinly sliced, divided
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Preheat oven to 400 ℉

  • Carefully spoon and spread the cream cheese mixture onto the top of the breasts.
  • Evenly distribute the cheeses and jalapeños over chicken. Bake 10-12 minutes, until chicken has reached an internal temp of 165℉.
  • Broil chicken on high for 2-3 minutes, until cheese is golden and melty.
  • Remove Jalapeño Popper Chicken from oven and garnish with bacon and remaining green onion.
