Grilled Chicken Sandwich

A grill, the sunshine, the breeze – it’s all just such a vibe! Summer just makes me want to grill and lounge around on a lawn chair! This Grilled Chicken Sandwich was fresh, easy to make, and bursting with flavor! The chicken was marinated for 5 hours before grilling it and boy – it really set the bar high! It was the juiciest, most flavorful chicken ever! Nestled in between some fresh lettuce, tomato, red onion, avocado, and mayo – it was the perfect amount of crunch, cream, and tang! And that buttery brioche bun was the cherry on the top!

What ingredients do I need to make this?

Chicken Breasts
Tomato
Red Onion
Avocado
Mayo
Artisan lettuce
Brioche buns
Salt and pepper

How do I make this Grilled Chicken Sandwich?

To prep the chicken breast for grilling:

For max flavor, marinate your chicken for several hours before grilling! Choose your favorite marinade or try the one I used in this recipe – a balsamic chicken marinade!

Slice your avocado, onion, and tomato ahead of time and get all other ingredients out and ready to use. This way your grilled chicken doesn’t get cold while you prep the toppings after grilling.

To grill the marinated chicken breasts:

Preheat grill to medium-high for 5 minutes and at the same time preheat oven to 350 F to toast your buns.

Grill chicken for 5 minutes on each side, flipping only once.

While the chicken cooks, toast your buns directly on the rack of your oven for 3 minutes, and butter them if desired.

Chicken is done when it has reached an internal temp of 165 F. Remove to a plate covered with foil until ready to eat. This is also giving the chicken a little time to rest.

To serve the grilled chicken sandwich:

Assemble the sandwich as follows – toasted and buttered buns, mayo, lettuce, tomato, shake some salt and pepper on the tomato, red onion, avocado, grilled chicken breast.

Tips:

  • I don’t recommend using a complex sauce, just because the chicken is the star of this dish and we want that marinade to shine through! If you don’t like mayo, you could always use miracle whip or another simple sauce.
  • Flipping the breast only once on the grill helps to keep it juicy!
  • If you don’t want to cut your breasts in half, you don’t have to. But keep in mind the cook time will increase the thicker they are. Alternatively, you could pound them down to about 1-1/2 inches thick.
