Caramel Apple Pancakes

In the morning, I’m usually wanting something savory! But today, I thought let’s try something totally new and different! These Caramel Apple Pancakes give a fair food vibe with a hint of Fall! Whenever I go to a fair I HAVE to get a caramel apple, they are one of my absolute favorites! When we woke up this morning it was a chilly 50 degrees, which made me think of Fall (gotta love the Midwest – insert eyeroll here) Fall is my FAVORITE season though, and these pancakes totally hit the spot! They were stuffed with granny smith apple and cooked to fluffy perfection! With a caramel drizzle, whipped cream, and cinnamon garnish – they were sweet, tart, and delicious!

What ingredients do I need for these caramel apple pancakes?
Flour
Milk
Granny Smith Apple
Egg
Butter
Brown Sugar
Baking Powder
Vanilla
Baking Soda
Cinnamon
Salt
For serving:
Whipped cream
Caramel Drizzle
Cinnamon
How do I make them?
To make the batter:
In a large mixing bowl, whisk all dry ingredients until combined.

Melt some butter and in a separate bowl, whisk with all other wet ingredients until combined.

Whisk the wet and the dry ingredients together. Don’t overmix! Stir in the apple.
Let batter stand at room temp for 10 minutes.

To make the caramel apple pancakes:
In a large skillet on medium heat, melt butter. Pour a bit of batter per pancake and fry for about a minute per side, flipping when you see bubbles across the pancakes. It’s best to check the bottoms though and not rely on the bubbles alone, as all stoves are different!

Flip pancakes only once and cook another minute or so, until golden brown on both sides. You may need to turn the heat to medium-low or even low and adjust the time as needed. You don’t want to burn your pancakes!

Repeat with remaining butter and batter.
To serve:
Garnish pancakes with caramel drizzle, whipped cream, and a dash of cinnamon on the top!

Tips:
- Letting the batter stand before cooking and flipping them only once helps to keep these pancakes fluffy!
- I did not peel my apple because shredding it keeps it fine enough where it’s not crunchy inside but if you want to peel it, you can! I like the green pop of color from the peel!
- You could also make this recipe with another type of apple if you’d like, though you will likely not get that tart/sweet combo. If you don’t want to use a Granny Smith, consider another tart apple such as McIntosh!

Caramel Apple Pancakes
Ingredients
- 1 ½ cups all-purpose flour
- 1 ¼ cups milk
- 1 granny smith apple unpeeled and shredded
- 1 egg
- 6 tbsp butter divided
- 1 tbsp brown sugar
- 1 ½ tsp baking powder
- 1 tsp vanilla
- ½ tsp baking soda
- ½ tsp cinnamon
- ¼ tsp salt
For Serving:
- Whipped cream
- Caramel drizzle
- Cinnamon
Instructions

- Melt 3 tbsp of the butter and in a separate bowl, whisk with all other wet ingredients until combined.
- Whisk the wet and the dry ingredients together. The batter doesn't have to be lumpy but don't overmix it! Stir in the apple.
- Let batter stand at room temperature for 10 minutes.
To make the caramel apple pancakes:
- In a large skillet on medium heat, melt 1 tbsp butter.
- Pour 1/4 cup of batter per pancake and fry the pancakes for about 1-1/2 minutes, flipping when you see bubbles across the pancakes. It's best to check the bottoms though and not rely on the bubbles alone, as all stoves are different!
- Flip pancakes only once and cook another 1-1/2 minutes, until golden brown on both sides. You may need to turn the heat to medium-low or even low and adjust the time as needed.
- Repeat with remaining butter and batter.
To serve:
- Serve pancakes hot and garnish with caramel drizzle, whipped cream, and a dash of cinnamon on the top! Enjoy!
