Spicy Fried Chicken Sandwich

Chicken sandwiches are always yummy! Fried chicken – yup. Spicy chicken – yup. Avocado Blue Cheese Dressing…YUP! This Spicy Fried Chicken Sandwich was a total vibe! The weather is starting to get a little crisp and there’s nothing like a hot meal on a chillier day! This sammy was spicy, it was juicy, it was so fresh! The tomato slices on there and that little bunch of arugula, and then that creamy, tangy Avocado Blue Cheese Dressing with the brioche bun to bring it all together. So, so good!

So, what’s the chicken sandwich craze all about anyway?
The very first spicy chicken sandwich to ever drop was in the 1980’s by Chik-Fil-A! From there, Wendy’s made one in the 90’s, and occasionally another fast-food chain would recreate it for a limited time. In 2019, THE CHICKEN SANDWICH really blew up when Popeye’s started a war and their spicy version went viral! I remember when we first got a Popeye’s in our city and the line wrapped around the building for weeks! My husband was super crabby about having to wait 30-45 minutes for a chicken sandwich. But let me tell ya, it was the best I’ve ever had from anywhere!
What ingredients do I need to make this?
Chicken Breast
Flour
Baking Powder
Paprika
Frank’s Hot Sauce
Egg
Salt
Oregano
Cayenne
Garlic Powder
Onion Powder
Black Pepper
Vegetable Oil for Frying
For serving:
Brioche Buns
Arugula
Tomato

Equipment Needed:
- Cast Iron Skillet
- Tongs
- Baking Sheet with Rack
- Cutting Board
- Chef Knife
- Shallow Dishes
- Whisk
- Meat Thermometer
How do I make it?
The first thing you need to do is trim the fat from your chicken breasts and cut them in half along the width. Next, get out 2 shallow dishes and set up your breading station. In the first dish, whisk egg and hot sauce until combined. In the second dish, whisk all other sandwich ingredients besides the chicken breast and vegetable oil.


Add oil to cast iron skillet and heat until shimmering. Get out a baking sheet and line it with paper towel, then place a rack over the top. Preheat oven to 350 F. Toss the chicken breasts in the hot sauce and egg mixture, allowing the excess to drip off. Then dredge the breasts in the flour mixture, letting the excess fall off. To test if the oil is ready, toss a bit of the flour in there. If it sizzles, then it’s ready! You can also temp the oil, we’re looking for about 180 F. Fry the chicken breasts for a few minutes on each side. You may need to turn the heat down if experiencing a lot of splatter, smoke, or if the chicken starts to get too dark.

Chicken breast is done when it has reached an internal temp of 165 F. Move fried chicken to prepared rack. Add buns to the preheated oven, directly on the rack with the tops facing out. Toast buns for a few minutes.

Next, let’s build our Spicy Fried Chicken Sandwich! Smear some of the Avocado Blue Cheese Dressing on the top and bottom of the buns. Then add some arugula and tomato slices to the top bun, followed by the fried chicken! Enjoy!




Tips:
- This wasn’t too spicy as we wanted it to be kinda kid-friendly! If wanting more spice, consider adding an additional 1/4 tsp of cayenne to the breading mixture.
- To reheat these, just pop them in the air fryer for 3 minutes at 390 F

- ¼ tsp Cayenne
- 1 cup Vegetable Oil for frying
For serving:
- Brioche Buns
- Arugula
- 1 Tomato thinly sliced

Instructions
