With kids, life is hectic! From son up to son down, I am just givin’ er – always looking for ways to simplify things for me and my family. This Maple Sausage Egg Bake was absolutely delicious, and the best part? It makes a whole bunch! Have this for meal prep during the week or toss it in the freezer to have at a later date. Batch breakfasts that freeze well are so CLUTCH. This was loaded with protein, juicy, fluffy eggs, gooey cheese, fresh veggies, and big crumbles of maple flavored breakfast sausage. Kinda sweet, kinda savory – these are flavors everybody loves!

What makes egg bakes so great for a busy family?

Egg bakes are great for busy families because they’re easy to make, large enough to feed several people, and freeze phenomenally! Mornings are often chaotic and meal prepping breakfast can dramatically reduce the stress load for busy parents. Families even report feeling calmer knowing that they don’t have to figure out breakfast bright and early.

Egg bakes have been around forever! Longer than freezers, longer than cars! They’re actually ancient! And back in ancient Rome, they obviously had the right idea! They’d be mixing eggs, spices, herbs, and cream, add them to dishes made of bronze or clay, then set them next to open flame or insert them into a domed clay oven. The clay ovens, called “clibanus,” basically acted as a Dutch oven.

Isn’t that wild? Such a simple idea, in what must have been a challenging era to live in.

What ingredients do I need to make this?

For the maple sausage egg bake:

Ground Maple Breakfast Sausage
Green Onion
Garlic
Roma Tomato
Spinach
Eggs
Heavy Cream
Salt
Black Pepper
Garlic Powder
Dried Oregano
Onion Powder
Shredded Double Cheddar

What equipment do I need?

How do I make it?

To prep the ingredients:

To get started on this recipe, first wash your veggies and herbs, then preheat the oven to 375 F.

Next, mince the garlic, then deseed and dice the tomato. Thinly slice the green onion, then separate the green and white parts.

In a large skillet on medium heat, brown the maple breakfast sausage, breaking it up into large crumbles with a spatula as it cooks, and cooking until crispy and no longer pink.

Leaving the little bit of sausage grease in the pan, push the sausage to the side, then add the white parts of the green onion and the garlic.

Cook the mixture, stirring often, until the garlic is fragrant.

Next, stir in the tomato, and cook for a minute or so until it becomes kinda jammy. Stir in the spinach, and once wilted, remove from heat.

Move to a bowl until ready to use.

To prepare the egg mixture:

In a separate large bowl, crack the eggs, then vigorously whisk them until beaten.

Pro Tip: Vigorously whisking the eggs incorporates air, which makes them stand tall and fluffy once baked!

Whisk in the cream and spices, then whisk in half of the cheese.

To make the maple sausage egg bake:

Grease a 9-inch baking pan, then spread the sausage and veggie mixture into the bottom of the pan in an even layer.

Push down gently with a spatula. This gives our egg bake a nice and sturdy base!

Next, pour the egg mixture over the sausage and veggie layer, then top with the rest of the cheese and the green onion.

Bake for a while, until the eggs have set and the top is golden brown in color. The edges will start to pull away from the sides of the pan, that’s when you know it’s done!

Wait a few minutes before slicing.

To serve:

Slice the maple sausage egg bake into large squares and serve hot. Enjoy!

Tips:

  • This will keep for 3-5 days if stored in the refrigerator. It can also be frozen for up to 3 months!
  • Add whatever veggies you want to this. Mushroom, bell pepper, whatever!
  • Don’t have shredded cheddar? Feta cheese is also amazing with eggs.
  • Hosting brunch? Double the recipe and use a 9×13 pan instead! Just add 5-15 minutes of cook time and be sure to check often for doneness.

Ingredients
  

For the maple sausage egg bake:

  • 1 lb. Ground Maple Breakfast Sausage
  • 2 Green Onions thinly sliced, white and green parts separated
  • 2 Garlic Cloves minced
  • 1 Roma Tomato deseeded and diced
  • 1 cup Spinach packed
  • 6 Eggs
  • ½ cup Heavy Cream
  • ¾ tsp Salt
  • ½ tsp Black Pepper
  • ½ tsp Garlic Powder
  • ¼ tsp Dried Oregano
  • ¼ tsp Onion Powder
  • 1 cup Shredded Double Cheddar divided

Instructions
 

To prep the ingredients:

  • Remove from the oven, waiting 5-10 minutes to slice.

To serve:

  • Slice the maple sausage egg bake into large squares and serve hot. Enjoy!
