Sausage and Potato Sheet Pan

Sheet pans are my favorite meals for busy weekdays! There just isn’t enough time in the day it feels like sometimes and that’s where these bad boys come in clutch! Toss everything together on a pan and bake! This Sausage and Potato Sheet Pan was such a hit with the family and made a ton for leftovers! The house smelled so good for hours afterwards! This definitely gives a fall vibe since it features a lot of farmers market seasonal favorites, but this sheet pan would rock all through the winter!

What do I need to make Sausage and Potato Sheet Pan?
Italian Sausage
Baby Reds
Baby Carrots
Mushrooms
Grape Tomato
Red Onion
Lemon
Garlic
Olive Oil
Italian Seasoning
Onion Powder
Salt
Black Pepper
Chili Powder
Optional garnishes:
Parsley
Parmesan
Green Onion
How do I make it?
Preheat oven to 400 F and line a large baking sheet with parchment paper for easy cleanup.
In a large bowl, whisk all seasonings, lemon zest and juice, garlic, and oil until combined. Add all ingredients besides garnishes and grape tomatoes to the bowl and using your hands, toss to combine.
Spread everything out onto a baking sheet in a single layer. In the same bowl, toss tomatoes in residual juice and seasoning mixture, set aside.
Bake, flipping halfway through for even cooking. Remove from oven, add grape tomatoes and cook several minutes more. Broil on high for a few minutes to get a nice color but watch carefully to avoid burning.
Garnish with parsley, parmesan, and green onion if desired! Enjoy!

Tips:
- To shorten the roasting time, consider chopping up the veggies even smaller! You can also up the oven temp!
- For a spicier vibe, garnish with some crushed red pepper just before serving!
- Save prep time and buy sliced mushrooms! The baby carrots also save time, since you don’t have to peel them – and since they’re all the same size, they cook more evenly!
- Use any potato that you want here! It doesn’t really matter! Just make sure to scrub well and chop them into bite-sized pieces!

Ingredients
- 1 lb Italian sausage cut into 1-inch coins
- 1 ½ lbs baby red potatoes scrubbed and diced
- 2 cups baby carrots sliced
- 8 oz white mushrooms sliced
- 1 pint grape tomatoes
- Juice and zest from one lemon
- 3 garlic cloves minced
- ½ a red onion sliced into half-moons
- 3 tbsp olive oil
- 1 tbsp Italian seasoning
- 1 tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp chili powder
Optional garnishes:
- parsley minced
- parmesan freshly grated
- green onion thinly sliced
Instructions
- Preheat oven to 400 ℉ and line a large baking sheet with foil for easy cleanup.
- In a large bowl, whisk all seasonings, lemon zest and juice, garlic, and oil until combined.
- Add all ingredients besides garnishes and grape tomatoes to the bowl and using your hands, toss to combine.
- Spread everything out onto the baking sheet in a single layer.
- In the same bowl, toss tomatoes in residual juice and seasoning mixture, set aside.
- Bake for 35 minutes, flipping halfway through with a spatula.
- Remove from oven, add grape tomatoes and cook for 10 minutes more.
- Broil on high for 2 minutes to get a nice color, watch carefully though!
- Garnish Sausage and Potato Sheet Pan with parsley, parmesan, and green onion if desired!
