Blackberry Pancakes

I love pancakes, but I’m kind of choosy with them! I don’t really eat plain pancakes; they have to be stuffed with something! Fruit, chocolate, pumpkin, anything! These Blackberry Pancakes were unique and delicious! I’ve actually never made a homemade pancake before, and I was surprised at how easy it was and how amazing they tasted! These were so fluffy and sweet, but then the blackberry comes in and offers a small sour note for the perfect flavor profile! These make an amazing weekend breakfast!

What do I need to make Blackberry Pancakes?

Flour
Milk
Blackberries
Egg
Butter
Granulated Sugar
Vanilla
Baking Powder
Baking Soda
Salt

How do I make them?

Wash blackberries thoroughly and set aside on a paper towel lined plate, pat dry. In a large bowl, whisk all dry ingredients until combined. In a separate medium bowl, whisk together wet ingredients. Add wet ingredients to the dry and whisk until smooth. Gently stir in blackberries.

In a large skillet, some butter on medium heat. Pour in 1/4 cup batter per pancake and cook a minute or so per side, until golden brown. Flip when they start to bubble. Be sure to check them to avoid burning! Flipping only once keeps the pancakes fluffy! Repeat steps with remaining butter and batter.

Serve Blackberry Pancakes hot with butter, syrup, powdered sugar, additional berries – whatever you’re feeling! Enjoy!

Tips:

  • Mix in some banana and blueberry for a mixed berry vibe! Or top these yummy pancakes with some Strawberry Compote!
  • You can also mix in dried fruits if you want to!
  • These pancakes are good hot, cold, with syrup, even by themselves! Make some extra for a grab and go snack!
  • Some fruits just don’t go well in pancakes! Kiwi, grapes, and watermelon are a few that will not work due to the wateriness or texture when mixed in the batter. Most fruits are fair game though!

Ingredients
  

  • 1 cup flour
  • 1 cup milk
  • 6 oz fresh blackberries
  • 1 large egg
  • 2 tbsp butter divided
  • 1 tbsp granulated sugar
  • 1 tbsp vanilla
  • 2 tsp baking powder
  • ยฝ tsp baking soda
  • ยผ tsp salt

Optional garnishes

  • syrup

  • powdered sugar

Instructions
