Chicken Burrito Bowl

We love eating all kinds of Mexican inspired food! This Chicken Burrito Bowl is a fusion of flavors! It has the authentic flavors of the lime and cilantro but then you get sort of an American vibe from the shredded lettuce and the sour cream, and then there’s like a Southwest type of vibe from the black beans and corn! So good! This bowl has it all! I could eat this every day! It was super easy to make – perfect for a busy weeknight! You could totally wrap this up in a burrito as well and it would be fabulous!
What ingredients do I need for this?
For the chicken marinade:
Chicken Breast
Garlic
Olive Oil
Salt
Chili Powder
Cumin
Paprika
Onion Powder
Garlic Powder
Black Pepper
For the burrito bowl:
White Rice
Black Beans
Corn
Orange Bell Pepper
Lime
Cilantro
Salt
Black Pepper
For serving:
Sour Cream
Fresh Salsa (here’s my recipe!)
Shredded Lettuce
Green Onion
Lime
How do I make it?
To make the marinade and prep the chicken:
Cut the fat off of the chicken and cut it into bite sized pieces. Next, in a large bowl, whisk all ingredients for chicken marinade besides the chicken. Add the chicken to the bowl and toss with hands until coated. Cover and refrigerate for several minutes.
To make the chicken burrito bowl:
In a saucepan, cook rice to package instructions, fluffing with a fork when it’s done. Stir in some lime juice, cilantro, salt, and black pepper.
In a large skillet, cook marinated chicken on medium heat for a few minutes, stirring occasionally. Add bell pepper to skillet and cook a few minutes, then add the black beans and corn. Turn heat to medium low and cook a few minutes more, until warmed through. Add remaining cilantro, stir, and remove from heat.
To serve:
Spoon rice into bowls, top with chicken black bean mixture and garnish Chicken Burrito Bowls with lettuce, salsa, sour cream, green onion, and lime wedges! Enjoy!
Tips:
- This Chicken Burrito Bowl will keep in the refrigerator for about 4-6 days in an airtight container.
- Add whatever you want to this bowl! Make it spicy, add some avocado or jalapeรฑo! Whatever you feel like doing!
- If you’re not feeling a bowl, wrap this all up into a burrito! This mix would also make some amazing nachos!

Ingredients
For the chicken marinade:
- 1 ยฝ lbs chicken breast fat trimmed, cut into bite sized pieces
- 2 garlic cloves minced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp chili powder
- 1 tsp cumin
- ยฝ tsp paprika
- ยผ tsp onion powder
- ยผ tsp garlic powder
- ยผ tsp black pepper
For the bowl:
- 2 cups white rice
- 1 can black beans drained and rinsed
- 1 lime wedged
- 1 ยฝ cups frozen corn thawed
- ยฝ cup orange bell pepper diced
- 1 tbsp cilantro minced and divided
- ยฝ tsp salt
- ยผ tsp black pepper
For serving:
- sour cream
- fresh salsa- store-bought or here's my recipe!
- shredded lettuce
- green onion
- lime wedges
Instructions
To make the chicken marinade:
- In a large bowl, whisk all ingredients for chicken marinade besides chicken.
- Add the chicken to the bowl and use your hands to toss and coat.
- Cover and refrigerate for 30 minutes.
To make the chicken burrito bowl:
- In a saucepan, cook rice to package instructions and when it's done, fluff with fork.
- Stir in 1 tbsp lime juice from the wedges, 1/2 tbsp cilantro, salt, and black pepper.
- Next, in a large skillet, cook marinated chicken on medium heat for 2 minutes, stirring occasionally.
- Add bell pepper and cook 2-3 minutes, stirring occasionally.
- Stir in the black beans and corn.
- Turn heat to medium low and cook 3 minutes more, until warmed through.
- Add in remaining cilantro, stir, and remove from heat.
To serve:
- Spoon rice into bowls, top with chicken black bean mixture and garnish Chicken Burrito Bowls with lettuce, salsa, sour cream, green onion, and lime wedges! Enjoy!
