Chocolate Banana Muffins

Sometimes you want something a little sweet, a little healthy, something versatile! These Chocolate Banana Muffins could be a breakfast, snack, or dessert! They’re sweet, but not too sweet – which is totally my jam! You get the banana flavor, the chocolatey chips, a hint of cinnamon! These are the whole package! Delicious and the kids love them!

What ingredients do I need to make these?

Bananas
Flour
Applesauce
Granulated Sugar
Cocoa Powder
Chocolate Chips
Vegetable Oil
Vanilla
Baking Soda
Baking Powder
Ground Cinnamon
Cooking Spray

How do I make the Chocolate Banana Muffins?

Preheat oven to 375 F and lightly grease a muffin pan. In a large bowl, whisk all dry ingredients until combined, then stir in half of the chocolate chips.

In another large bowl, mash bananas and stir in all other wet ingredients until combined. Pour the wet into the dry and stir to combine. You should have a brownie batter type consistency.

Pour the batter into the muffin pan and place 3-4 chocolate chips on the top of each.

Bake until puffy, slightly crispy, and bounces back from a light poke!

Allow Chocolate Banana Muffins to cool for a few minutes before removing to a cooling rack to cool completely! Enjoy warm with a hot cup of coffee or a cold glass of milk!

Tips for these muffins:

  • I used applesauce in this recipe to give the muffins moisture! It’s an old trick I learned from my grandma. You can also use pudding mix or yogurt!
  • These muffins don’t need to be refrigerated and will last 3-5 days if kept in an airtight container at room temperature. They can also be wrapped in plastic wrap or stored in a Tupperware and frozen for up to 3 months.
  • You could skip the chocolate chips for a slightly healthier option! You could also use a peanut butter chip instead!

Ingredients
  

  • 3 large bananas very ripe, mashed
  • 1 ¾ cups flour
  • 1 cup applesauce
  • ¾ cup granulated sugar
  • ½ cup cocoa powder
  • ½ cup semi-sweet chocolate chips divided
  • ¼ cup vegetable oil
  • 1 tsp vanilla
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp ground cinnamon
  • cooking spray

Instructions
 

  • Preheat oven to 375 ℉ and lightly grease a muffin pan.
  • In a large bowl, whisk all dry ingredients until combined, then stir in half of the chocolate chips.
  • In another large bowl, mash bananas and stir in all other wet ingredients until combined.
  • Pour the wet into the dry and stir until to combine. You should have a brownie batter type consistency.
  • Pour the batter into the muffin pan and place 3-4 chocolate chips on the top of each.
  • Bake 20-22 minutes, mine were perfect at 20! Muffins should bounce back from a slight poke and appear puffy and slightly crispy!
  • Allow Chocolate Banana Muffins to cool for about 5 minutes before removing to a cooling rack to cool completely!
  • Serve with a glass of cold milk or a hot cup of coffee! Enjoy!
