Salted carrot cake crunch bars made for a tasty fall treat.

With fall coming up and root vegetables flourishing, I wanted to bake something sweet, cozy, and delicious for my boys. Carrot cake is one of my husband’s favorites, and these Salted Carrot Cake Crunch Bars definitely didn’t disappoint. They’re crunchy, moist, a little lemony, and warm with cinnamon – and that peanut butter drizzle ties everything together perfectly. These bars feel fresh and bright, like they came straight from a bakery, but they also give that grandma’s kitchen vibe. Easy to make and scrumptious af – they make a great lunchbox snack for the kids, bougie breakfast, or holiday potluck treat that everybody would love!

These aren’t just any carrot cake inspired dessert bars. They’re basically like “everything but the kitchen sink bars” – but in a way you’ve never seen before! The fresh carrots add moisture, the lemon juice brightens everything up, the cinnamon makes them feel instantly cozy. Then you’ve got the Rice Krispie, peanut, and granola crunch bringing some fun, unexpected texture. The coconut flakes and chocolate chips bring sweetness, while the peanut butter drizzle adds a creamy, melty finish that ties it all together.

Carrots actually lose their sweetness if they’re stored too warm after harvesting – they literally thrive in the cold! Environments that are cold and humid keep them nice and crispy! You can even leave them in the garden until first frost, and in many cases, that frost just makes them even yummier! Once you pull them from the ground, store them in a cool, dark place (basically mimicking their underground home) and they’ll keep for 4-6 months. Honestly…how awesome is this veggie?!

How do I make them?

To prep the ingredients:

To get started on this recipe, first wash your carrots and your lemon, then dry them off. Peel and shred the carrots, then zest and juice the lemon. Chop the peanuts, then set everything off to the side until ready to use.

Preheat the oven to 350 F and grease an 8 x 8 baking pan.

To make the salted carrot cake crunch bars:

Next, melt the butter for the base then add to a large mixing bowl along with the brown sugar.

Whisk to combine.

Whisk in the egg, vanilla, shredded carrots, lemon zest, and juice.

Once combined, mix in the flour, baking powder, cinnamon, and salt.

Add the Rice Krispies, granola, peanuts, coconut flakes, and the semi-sweet chocolate chips, then stir to combine.

To bake the bars:

Using a rubber spatula, spread the mixture into the prepared baking pan, smoothing it out into an even layer.

Bake for a while, until the edges are crispy and the top is golden brown in color. Remove from the oven to cool slightly before making the peanut butter drizzle.

To make the peanut butter drizzle:

In a small dish, microwave the peanut butter and butter just briefly, then stir in the powdered sugar until smooth.

Pro Tip: If you want to get fancy with it, use a toothpick to drag the drizzle and spread it around for a bakery style look!

Top with flaky salt and coconut flakes, then set aside to cool completely. Once cooled, pop it into the fridge to chill for a bit.

Pro Tip: Chilling the bars helps everything set and makes them easier to cut!

To serve:

Once chilled, cut into even bars, measuring into precise squares, if desired.

Tips:

  • Store these salted carrot cake crunch bars in an airtight container on the counter for a few hours to eat after slicing, then move to the refrigerator where they can be stored for 3-4 days. You may also freeze them for up to 3 months.
  • These were like dense oat-cookie meets banana/zucchini bread! The fridge made them feel fudgy! If you want even more crunch, add another tbsp or two of peanuts!
  • For a healthier version, you could also skip the chocolate chips and they would still be sensational!
  • This recipe makes about 9 bars. If you want them to go further, consider cutting them into 18 bite-sized squares!

Ingredients

  • ½ cup Butter melted
  • ¾ cup Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla
  • 1 cup Carrots peeled and shredded
  • Zest and Juice from One Small Lemon about 1/2 tbsp zest and 1 tbsp juice

  • Bake for 22-24 minutes, until the edges are crispy and the top is golden brown in color.

    My kids loved these and so did I! Our family loves carrot cake so this is special to have a snack that is just as delicious, especially in fall! I made a batch for their school lunches.
