Avocado Chicken Salad

I love avocados and I LOVE chicken salad! Both are staples in our house and this avocado chicken salad is made in 15 minutes or less! It is the perfect lunch or snack for a warm sunny day! Oh, and it’s kid approved! This chicken salad would be delicious served on any type of bread, croissant, or in a wrap!

Why do these flavors go so well together?

There are so many different textures and flavors in this dish, and they all complement each other so well! You’ve got the creamy avocado, the tangy mayo, zesty lemon and lime juice, the crunchy vegetables, and that flavorful juicy chicken! It makes such a delicious and healthy meal!

What ingredients do I need to make this?

Avocado
Cooked Chicken – rotisserie or check out my recipe for oven baked chicken breasts
Salt
Black Pepper
Celery Salt
Chili Powder
Green Onion
Garlic
Lemon Juice
Lime Juice
Parsley
Mayo

How do I make it?

Add all ingredients to a large bowl and mix well to combine. Use a spoon or a fork to chop/mash up the avocado well. I like to leave some chunks in mine. Garnish with additional parsley if you’d like! Serve immediately, or for best results, chill for an hour or two before serving.

Serve Avocado Chicken Salad on bread, with crackers, on a croissant, whatever you’re feeling! This also makes a yummy wrap or even a melt!

Tips:

  • This chicken salad will keep for 2-3 days if stored in an airtight container in the refrigerator
  • Be sure to keep some extra lemon or lime juice on hand and stir in as needed to prevent the avocado from browning due to oxidation

Ingredients
  

  • 2 cups chopped cooked chicken rotisserie or check out my recipe for oven baked chicken breasts
  • 3 green onions thinly sliced
  • 2 avocados ripe – cut into cubes
  • 2 garlic cloves minced
  • ยฝ cup mayo
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley minced
  • ยฝ tbsp lime juice
  • ยฝ tsp salt
  • ยฝ tsp celery salt
  • ยผ tsp black pepper
  • Pinch of chili powder

Instructions
