Sheet pans are LIFE during the week! Life gets so busy and it’s hard to do it all sometimes. Tossing everything onto a sheet pan is just, liberating. You can even prep the ingredients the night before, as long as you soak the sweet potatoes in water! The hack to line the sheet pan with foil also makes this dinner a breeze! This Sausage Brussels Sheet Pan is super yummy, colorful, and kid approved! The feta as a garnish is a nice and unique touch!

Why this is an amazing fall/winter dinner!

Sheet pans are great because they’re easy, and they’re also really great for cold weather! Crank on the oven, toast up these ingredients, and boom! Dinner’s ready. This recipe also features in season root vegetables which are super easy to get during this time of year at local farmers markets!

You know the story of how brussels sprouts are just these DREADED vegetables from childhood that we were forced to eat – but hated?! Well, it turns out modern day brussels are a lot better than those from the past! In the 1990’s, Dutch plant breeders were able to identify the specific compounds that make brussels sprouts taste bitter and then decided to pivot, focusing on breeding varieties with lower bitterness instead! That’s pretty wild! The ones we see today, are better and less of…a sulfur bomb!

And sweet potatoes? They’re like ridiculously good for you! They’re one of the richest natural sources of beta-carotene, which your body will then convert into Vitamin A! Vitamin A supports the health of your skin, bones, and vision!

What do I need to make Sausage Brussels Sheet Pan?

Turkey Kielbasa
Yellow Onion
Sweet Potatoes
Brussels Sprouts
Olive Oil
Salt
Garlic Powder
Italian Seasoning
Black Pepper

Optional garnishes:

Feta
Parsley

How do I make it?

Preheat oven to 400 F. Line a large baking sheet with tinfoil for easy cleanup.

In a large bowl, mix all ingredients besides garnishes together. I like to use my hands, that way you can ensure an even coat. Add all ingredients to sheet pan and bake, flipping ingredients with a spatula halfway through.

Garnish with feta and parsley, if desired. Enjoy!

Tips:

  • This dish will keep for 3-5 days if stored in an airtight container in the refrigerator
  • If you’re not a feta fan, you can always garnish with some freshly shredded parmesan cheese!

Ingredients
  

  • 1 lb brussels sprouts halved
  • 2 sweet potatoes diced into 1 inch cubes
  • 13 oz turkey kielbasa sausage sliced into 1 inch rounds
  • ½ yellow onion sliced
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp italian seasoning
  • ¼ tsp black pepper

Optional garnishes:

  • feta
  • parsley

Instructions
 

  • Preheat oven to 400 ℉
  • Line a large baking sheet with tinfoil for easy cleanup
  • In a large bowl, mix all ingredients besides garnishes together. I like to use my hands, that way you can ensure an even coat
  • Add all ingredients to sheet pan and bake for 25 minutes, flipping ingredients with a spatula halfway through
  • Garnish Sausage Brussels Sheet Pan with feta and parsley if desired.
